Cucumber salad may be having a moment, but vegetables in general are full of health benefits. “The ‘water your gut’ beauty food,” says Jessica Shand, a naturopathic nutritionist. “It doesn’t often get the credit it deserves, probably because of its bland flavor and the fact that it’s a bit like an old-fashioned salad. But it’s a great cleansing and beauty food to add to your summer meals.”

Nutritionally, cucumbers are 95 percent water, so they’re super hydrating and have a ton of benefits for all aspects of your health—including your skin. “I like to think of cucumbers as a great way to stay hydrated, but with all the added benefits of soluble fiber to nourish your digestive system, help flush toxins from your system, prevent constipation, and create a less acidic environment in your body to create a gut microbiome,” she says.
